Garlic: A powerful natural anti-bacterial
A key ingredient in garlic is 100 times more powerful than two popular antibiotics at fighting a leading cause of food poisoning, scientists have found.
Tests discovered that the compound, diallyl sulphide, can easily breach a slimy protective biofilm employed by the bug to make it harder to destroy.
Not only is it a lot more powerful than antibiotics erythromycin and ciprofloxacin, it also takes a fraction of the time to work.
The discovery, published in the Journal of Antimicrobial Chemotherapy, could open the door to new treatments for raw and processed meats, and food preparation surfaces, that would reduce the toll of Campylobacter food poisoning.
Dr Michael K onkel, from Washington State University, said: 'This work is very exciting because it shows this compound has the potential to reduce disease- causing bacteria in the environment and in our food supply.
'Campylobacter is the most common bacterial cause of food-borne illness in the United States and probably the world.'
Symptoms of the infection include diarrhoea, cramping, abdominal pain and fever.
The bacteria also triggers nearly a third of cases of a rare paralysing disorder called Guillain-Barre syndrome.

Most Campylobacter infections stem from eating raw or undercooked poultry or foods that have been cross-contaminated via dirty surfaces and utensils.
It is the most common cause of food poisoning in the UK, according to the Food Standards Agency, and was responsible for 88 deaths in England and Wales in 2009.

Diallyl sulphide is not an "ingredient" in garlic as garlic cannot be made like some recipe! It is in fact a compound/component/chemical - take your pick!

My whole family came down with campylobacter in August after a takeaway. (We know it was the takeaway as that takeaway meal was the only poultry we'd consumed that entire week!) It was awful, I was ill for a fortnight. We were all taking metronidazole, which is an antibiotic so strong it is even used to treat infections of the brain and bone marrow, as it penetrates all your cells. We took this for a fortnight and the side effects were horrific. In addition to the antibiotics, we had to down a bowl of unsweetened probiotic yogurt, 2 hours after each dose of tablets, and took probiotic capsules to replenish the friendly bacteria wiped out by the antibiotics. It is an awful illness that truly wipes you out, and if this breakthrough leads to more effective treatment I'll be very pleased! The council were notified about the takeaway by the pathology lab who tested us, but they couldn't find enough evidence. I hope they are far more careful with hygiene now ! I've not had a takeaway since...

Easier to take turmeric and/or clove capsules. Why the "spice trade" was so historically important....pre refridgeration, 'twas the spices that killed the nasties in folks digestive systems.....and they still do.

Leaving out how smelling of garlic increases your personal space, researchers in both the UK and US proved over thirty years ago that garlic, specifically the sulphide, kills viruses at 21cm! It is the sulphide that gives one garlic breath, as well.

I love garlic , i love italian food so i use lots in my cooking....Yummy garlic, good for upset tums, and healthy hearts, and the good news is, that you can never overdose on garlic..No wonder the ancients called it the bulb of power...They fed it to Roman soldiers before battle, to increase stamina and courage.. Hippocrates called garlic the ideal medicine food advocating its use for pulmonary complaints and many other conditions..The first original 0lympic athlets traditionally chewed a clove of garlic before participating in the games...Hippocrates preached let your food be your medicine, let your medicine be your food... Perfect easy sense to follow, what you eat is what you are..
